After buying black rice cake at the supermarket and enjoying it, I tweaked the recipe multiple times to get the taste just right.

Black Rice Cake

Story

This steamed cake combines black rice flour, cake flour, and glutinous rice flour for a soft, chewy texture. It is steamed until fluffy and then cut into pieces to serve.

Ingredients

Black rice flour 100g
Cake flour 100g
Glutinous rice flour 50g
Eggs 4
Salad oil 70g
Sugar 80g
Baking powder 3g

Prepare the ingredients.

Add white sugar and salad oil to the eggs.

Beat the eggs at high speed with an electric mixer for 2 minutes.

Sift all the powders together and add to the egg mixture.

Mix well.

Pour into the cake mold.

Boil water, add the cake batter and steam on high heat for 10 minutes, then change to medium heat and steam for another 20 minutes; turn off the heat and let sit for 10 minutes before removing.
