Instructions

1

Step 1

Add yeast powder to the flour and mix well.

2

Step 2

Add an appropriate amount of water to the flour and stir with chopsticks until it forms a flocculent texture.

3

Step 3

Knead by hand into a smooth dough (smooth surface, smooth hands, smooth bowl).

4

Step 4

Place in a warm spot, cover with a lid, and let it rise until doubled in size.

5

Step 5

Take out the dough and knead thoroughly to release the air.

6

Step 6

Divide the dough into two portions, and knead cocoa powder into one of them.

7

Step 7

Roll each color of dough into a flat sheet of even thickness.

8

Step 8

Stack the two dough sheets together.

9

Step 9

Roll up from one end; you can brush a little water while rolling to make it tight.

10

Step 10

Cut into pieces of even thickness.

11

Step 11

Place the cut side up and press flat.

12

Step 12

Roll out into wrappers.

Place the black sesame filling in the wrappers.

14

Step 14

Pinch around the edges to seal in the filling, forming bun shapes.

15

Step 15

Place the buns seam-side down after shaping.

16

Step 16

Once all are shaped, place them in a steamer, cover, and let rest for fifteen minutes.

17

Step 17

Steam over high heat for 25 minutes, then let sit for 3-5 minutes before lifting the lid.

18

Step 18

Remove from the steamer, plate, and serve.
