Braid Bread

This braided bread uses a single fermentation process for a soft, pull-apart texture and delicious flavor. It is extremely time-saving, simple to prepare, and bakes up quickly, making it perfect for tomorrow’s breakfast.

Made with Jinlongyu high-gluten wheat flour — which has a fine texture and pleasant wheat aroma, and is easy to roll into thin strips for braiding — this loaf bakes up fragrant in a Changdi air fryer oven. I couldn’t wait for it to cool even slightly after removing it from the oven before taking a small bite, and it was absolutely delicious.

Ingredients

Bread flour 300g
Milk powder 30g
Water 155g
Egg 1

Step 1

Prepare the required ingredients and weigh them precisely for later use.

First, knead the dough — either by hand or with a machine. This time I used a stand mixer. Pour the liquid ingredients into the mixer's bowl, then add the salt and sugar, followed by the flour, and finally the yeast. Knead until the dough can be stretched into a large thin membrane, then divide it into 6 equal portions.

Release the air, roll into rounds, and let rest for 10 minutes.

Take one portion and roll it out with a rolling pin into an oval (ox-tongue) shape.

As shown in the picture, press down on one side, then roll from the other side. Pinch the seam tightly to seal — one strand of the braid is done.

Three portions make one braided loaf, so you can make two loaves in total.

Pinch one end tightly and start braiding. Don't braid too tightly.

After braiding, pinch the ends tightly as well; otherwise they may open up during fermentation and lose their shape.

Place the braided loaves on a baking tray lined with parchment paper and let them rise until doubled in size.

Pipe salad dressing over the surface of the braided bread, then sprinkle with pork floss and crushed seaweed.

Preheat the Changdi air-fryer oven to 180°C on the middle rack and bake for 18 minutes. Place the baked braided bread on a cooling rack to cool, then it is ready to store and serve.
