Braised Beef with Straw Mushrooms

Ingredients

beef (washed and sliced) 500 g
straw mushrooms (trimmed and washed) 200 g
scallions (finely chopped) 1
ginger (sliced) 1 small piece
soy sauce 1 tsp
fine salt 1 tsp
white sugar 1 tsp
monosodium glutamate 2 tsp

Instructions

1

Marinate the beef

After washing and slicing the beef, add soy sauce, oil, water, and starch. Mix until evenly coated, then marinate for half an hour.

2

Fry the beef

Heat oil in a wok until it reaches about 80% heat. Add the beef and fry until about 70% done, then remove it and drain.

3

Cook and season the sauce

Leave a small amount of oil in the wok and add the scallions, ginger, garlic, and tomatoes. Stir-fry for about 2 minutes, then add water to taste along with the salt, ketchup, sugar, and monosodium glutamate.

4

Simmer and reduce the sauce

Once the tomatoes are very soft, return the beef to the wok and toss briefly. Thicken the sauce with a starch slurry, stir until evenly combined, and serve.
