Braised Chicken Feet with Chestnuts

Step 1
Wash the chicken feet and blanch them in cold water, then rinse and set aside.

The chestnuts 🌰 were peeled by the vendor; wash them and set aside.

Prepare small chili peppers, dried chili peppers, whole garlic, ginger, green onions, bay leaves, star anise, cinnamon bark, and Sichuan peppercorns.

Heat oil in a pot.
Step 5
Add sugar to prepare a caramel color.

The caramel color is ready; be careful not to burn it!

After the caramel color is ready, add an appropriate amount of warm water and bring to a boil.

Pour the caramel mixture into a clay pot.

Add the prepared spices into the clay pot.

Pour in light soy sauce.

Then pour in oyster sauce.

Then pour in dark soy sauce.

Add black pepper powder, cover, bring to a boil, then simmer on low heat for 10 minutes.
