Ingredients

Chicken hearts (washed, lightly scored in a cross pattern, blanched in boiling water) 250 g
Garlic sprouts (washed and finely chopped) 1
Red chili peppers (sliced) 2
Thick soy sauce (braising) 3 tbsp
Soy sauce (braising) 2 tbsp
Mixed braising spice packet (braising) 1 pack
Rock sugar (braising) 1 tbsp
Star anise (braising) 3
Cinnamon bark (braising) 1
Caramel (braising) 1 tsp
Water (braising) 2 bowls
Black pepper (seasoning A) a pinch
MSG (seasoning A) a pinch
Salt (seasoning A) a pinch
Braising sauce (for drizzling) 2 tbsp

Instructions

1

Prepare the Chicken Hearts

Wash the garlic sprouts and finely chop them; slice the red chili peppers and set aside. Wash the chicken hearts, lightly score a small cross pattern on each with a knife (see Figure 1), then blanch in boiling water and set aside.

2

Braise

Bring the braising ingredients to a boil to release their flavors, add the chicken hearts, then turn down the heat and simmer on low until fully cooked through (see Figure 2).

3

Plate with Sauce

Remove the chicken hearts and drain well, then arrange them on a serving plate. Combine the garlic sprouts, red chili peppers, seasoning A, and 2 tbsp of the braising sauce, mix well, and drizzle over the chicken hearts before serving.
