Ingredients

water 3 kg
light soy sauce 3 kg
Shaoxing Hua Diao wine 200 g
rock sugar 300 g
ginger chunks (fried in oil) 100 g
scallion strips (fried in oil) 200 g
cooking oil 200 g
star anise (wrapped in spice bag) 50 g
cinnamon bark (wrapped in spice bag) 100 g
licorice root (wrapped in spice bag) 100 g
black cardamom (wrapped in spice bag) 30 g
cloves (wrapped in spice bag) 30 g
sand ginger (wrapped in spice bag) 30 g
dried tangerine peel (wrapped in spice bag) 30 g
monk fruit (wrapped in spice bag) 1
red yeast rice (wrapped in a separate spice bag) 100 g

Instructions

1

Stir-fry the ginger and scallion

Heat the oil in a wok over high heat and fry the ginger chunks and scallion strips until deeply aromatic and softened.

2

Combine the liquid base

Pour the fried ginger and scallion into the boiling mixture of water, light soy sauce, Shaoxing Hua Diao wine, and rock sugar, then bring it back to a gentle simmer over low heat.

3

Add the spices

Bundle the braising spices in a soup stock bag, and wrap the red yeast rice in a separate soup stock bag. Add both bags to the pot at the same time as the fried ginger and scallion.

4

Simmer the braising liquid

When preparing the braising liquid for the first time, let it simmer gently over low heat for about 30 minutes before using, so the fragrance of the spices and the savoriness of the soy sauce can fully develop.
