Creaming Method for Butter Cake

Ingredients

Butter or shortening (room temperature, 70°F/21°C) to taste
Sugar to taste
Eggs to taste
Dry ingredients (sifted) to taste
Liquid ingredients to taste
Salt and spices (can be added with sugar or mixed into dry ingredients) to taste

Instructions

1

Preparation

Weigh ingredients accurately. All ingredients should be at room temperature (70°F/21°C).

2

Creaming the fat

Place the butter or shortening into the mixing bowl, attach the paddle, and mix on low speed until smooth and creamy.

3

Creaming fat and sugar

Add the sugar and beat the mixture on medium speed until it becomes light and fluffy. This takes approximately 8 to 10 minutes. If using melted chocolate, add it at this stage.

4

Adding eggs

Add the eggs in small batches. After each addition, beat until the egg is fully incorporated before adding the next. Once all the eggs are added, beat until the mixture is light and fluffy. This step takes about 5 minutes.

5

Scraping the bowl

Scrape down the sides of the mixing bowl to ensure even mixing.

6

Alternating dry and wet ingredients

Add the sifted dry ingredients (including spices if not added in step 3) alternately with the liquids. The sequence is as follows: add 1/4 of the dry ingredients and mix until just combined; add 1/3 of the liquid and mix until just combined. Repeat until all ingredients are used. Scrape down the bowl occasionally to mix evenly.
