Braised Chicken Legs with Tomato
Chicken leg meat is firmer than chicken breast—cut into large pieces and braised, it turns out aromatic, tender, and well-seasoned. Just before finishing, add a bowl of tomato and green pepper chunks; the red and green together create a lively, festive look that's a pleasure to serve. One note: the braised chicken leg is the star of the dish. The tomato and green pepper are not stewed with the chicken—they're added at the end and briefly heated, serving as a garnish and to add textural contrast. The flavor of this braised chicken leg remains a savory soy-sauce taste.

Instructions
Step 1
Prepare all ingredients: thoroughly clean the chicken legs, and wash the tomatoes and green bell pepper.
Step 2
Cut the chicken legs into large chunks, rinse thoroughly with cold water to remove any bone fragments.
Step 3
Pour a small amount of oil into a frying pan, add the garlic, scallion segments, and ginger slices, then stir-fry until fragrant.
Step 4
Add the chicken leg chunks to the pan and stir-fry over high heat.
Step 5
Pour in the cooking wine once the chicken surface changes color.
Step 6
Stir-fry evenly to remove the gamey smell, then add an appropriate amount of soy sauce to color and season.
Step 7
Pour in 2 bowls of hot water, making sure the water covers the chicken legs. Cover the lid and simmer over low heat for 20 minutes.
Step 8
Cut the tomatoes into large chunks, remove the seeds from the green bell pepper and cut it into pieces.
Step 9
The meat is tender and the soup is rich, and the amount of soy sauce provides sufficient saltiness, so there is no need to add salt. You may add salt according to personal preference if desired.
Step 10
Add the tomatoes and green bell pepper to the pan, stir gently for 1 minute. Do not overcook them to keep the ingredients intact and their bright color, then remove from the pan and plate.
