Braised Chicken Wings (Hong Shao)

Prepare the chicken wings
Rinse the chicken wings thoroughly. Make two diagonal cuts on each side of the wings to help them absorb the flavor.
Blanch the wings
Bring water to a boil. Add ginger slices and cooking wine. Put in the chicken wings and blanch for three minutes. Remove and drain well.
Stir-fry aromatics and caramelize
Prepare minced green onion, ginger, and garlic. Heat the wok with a little oil, add sugar, and stir-fry until it melts and turns into a red caramel color.
Braise the wings
Add the chicken wings to the wok and stir-fry to coat them in the sugar. Pour in light soy sauce to taste and mix well. Add the prepared minced aromatics and stir-fry evenly.
