Braised Crocodile Meat in Red Wine

Onion As needed
Red carrot As needed
Carrot As needed
Red wine As needed
Star anise As needed
Tsaoko As needed
Red chili pepper As needed
Garlic As needed
Sichuan peppercorn As needed

Instructions

Onion, garlic, green and red peppers, and ginger are ready.

Cut the crocodile meat into chunks, add ginger slices, and blanch with cooking wine.

Chopped chili, doubanjiang (bean paste), and red wine are ready.

Set aside the blanched crocodile meat.

Cut the carrots and red carrots into roll-cut chunks and set aside.

Heat oil in a pressure cooker and add the aromatics to release their fragrance.

Add the crocodile meat, chopped chili, doubanjiang, and red wine, and stir-fry until fragrant.
