Ingredients

Lamb ribs 500g
Carrot 1 piece
Scallion 1 segment
Ginger 1 piece
Garlic 4 cloves
Sichuan peppercorns 10g
Star anise 2 pieces
Bay leaf 2 leaves
Cinnamon bark 1 small piece
Fennel 10g
Cooking wine 2 tbsp
White sugar 1 tbsp
Dark soy sauce 2 tbsp
Soy sauce 1 tbsp
Yellow bean sauce 2 tbsp
Salt a pinch

Instructions

Step 1

Place water in a pot, add the lamb ribs, bring to a boil, skim off the foam, and remove to set aside.

Prepare the supporting ingredients.

Place oil in a pot, add Sichuan peppercorns, star anise, cinnamon bark, fennel, and bay leaves, and stir-fry until fragrant.

Add the lamb ribs, green onion, ginger, and garlic and stir-fry.

Add dark soy sauce, soy sauce, soybean paste, white sugar, and cooking wine and stir-fry.

Add hot water, bring to a boil over high heat, then simmer over low heat for 1 hour until only a small amount of sauce remains.

Add carrot chunks and stew until the sauce reduces, then add a little salt according to taste.
