Ingredients

pork chop to taste
bamboo fungus to taste
shiitake mushroom to taste
ginger to taste
garlic to taste
star anise to taste
cinnamon stick to taste
bay leaf to taste
dried chili pepper to taste
rock sugar to taste
cornstarch to taste

Instructions

Step 1

Rinse the pork chops and pat dry.

Coat both sides with cornstarch, then use a meat mallet to tenderize and flatten the meat.

Deep fry in hot oil over high heat until the meat holds its shape, then remove and set aside.

Prepare the ginger, garlic, dried chili pepper, cinnamon stick, star anise, and bay leaf.

Rinse the shiitake mushrooms, then soak in warm water until rehydrated.

Add the pork chops, shiitake mushrooms, and all aromatics to a pot. Pour in water, the shiitake soaking liquid, cooking wine, light soy sauce, dark soy sauce, and rock sugar. Bring to a boil and simmer for 10 minutes.

Add the bamboo fungus, season with salt to taste, then continue to simmer for another 10 minutes.
