This hearty and aromatic dish features tender, marinated chunks of soft-shelled turtle slow-braised with a medley of traditional spices and savory sauces. It is a deeply comforting delicacy often enjoyed for its rich flavors and warming qualities.

Ingredients

soft-shell turtle (600g) 1 piece
base oil 50g
base ingredients 650g
medicinal wine 20g
vinegar a pinch
spices a pinch
Chinese herbal ingredients a pinch
cilantro (cut into sections) 20g
scallions (cut into sections) 20g
salt (for marinating) 1g
MSG (for marinating) 3g
chicken bouillon powder (for marinating) 2g
ginger juice (for marinating) 15g
cooking wine (for marinating) 10g
mala seasoning / fragrant spicy seasoning (for marinating, choose one of the two) 5g

Main Ingredient Preparation

Scald with boiling water to remove the membrane on the surface of the soft-shelled turtle, then remove the internal organs, wash clean, and chop into 3 cm square pieces.

Marinating

Add 1g salt, 3g MSG, 2g chicken bouillon powder, 15g ginger juice, 10g cooking wine, and 5g numbing-spicy seasoning (or spicy seasoning) to the main ingredient, then gently mix evenly.

Cooking Method

Add base oil to the pot, then add the base ingredients, and arrange the marinated main ingredient on top. Evenly sprinkle with medicinal wine, Chinese herbal ingredients, and spices. Braise at 270° for 4 minutes, change to 130° and braise for 3 minutes. Pour in the sauce, braise for another 3 minutes, sprinkle with chopped scallions and cilantro, and it is ready to serve.
