This comforting dish features tender yellow catfish marinated to perfection and slowly braised in a rich, savory sauce, creating a deeply flavorful and satisfying meal.

Ingredients

yellow catfish (gills removed, gutted, washed, straight slits cut on both sides of the back) 750 g
base oil 50 g
base paste 650 g
medicinal wine 20 g
vinegar a pinch
spices a pinch
Chinese herbal ingredients a pinch
coriander (cut into sections) 20 g
scallion (cut into sections) 20 g
salt 1 g
MSG 3 g
chicken bouillon powder 2 g
ginger juice 15 g
cooking wine 10 g
spicy seasoning (or numbing spicy seasoning, choose according to taste) 5 g

Instructions

Preparation of Main Ingredient

Remove the gills and innards of the yellow catfish, wash clean, and make straight scoring cuts on both sides of the back.

Marinating the Main Ingredient

Add 1g of salt, 3g of MSG, 2g of chicken bouillon powder, 15g of ginger juice, 10g of cooking wine, and 5g of spicy seasoning to the main ingredient, then gently mix evenly.

Braising

Add base oil to a pot, then add the base ingredients, and arrange the marinated main ingredient on top. Evenly sprinkle with medicinal wine, traditional Chinese herbal ingredients, and spices. Braise at 270° for 4 minutes, change to 130° and braise for 3 minutes, add the sauce, cover and braise for another 3 minutes, sprinkle with chopped scallions and cilantro, and it is ready to serve.
