Broccoli Cauliflower Salad

Broccoli Cauliflower Salad

Ingredients

cauliflower (broken into florets (about 7-1/2 cups)) 1 medium head
broccoli (cut into florets (about 4 cups)) 1 medium bunch
seedless red grapes 2 cups
green onions (with tops, sliced) 6
shredded part-skim mozzarella cheese 2 cups (8 ounces)
mayonnaise 2 cups
grated Parmesan cheese 1/4 cup
sugar 2 tablespoons
white vinegar 2 tablespoons
sliced bacon (cooked and crumbled) 1/2 to 1 pound
Leaf lettuce
Additional red grapes (optional)

Instructions

Combine salad

In a large bowl, combine cauliflower, broccoli, grapes, onions, and mozzarella cheese.

Make dressing

In another bowl, mix mayonnaise, Parmesan cheese, sugar, and white vinegar; pour over the vegetable mixture; toss to coat.

Chill and serve

Cover and refrigerate for at least 2 hours. Stir in bacon before serving. Transfer to a lettuce-lined bowl. Garnish with additional grapes if desired.
