Butter Cookies and Cocoa Cookies
Rich, flavorful butter and cocoa cookies made with only butter, flour, and sugar.

Prepare the ingredients
Place the butter in a bowl and let it soften at room temperature. Sift the cake flour through a fine-mesh sieve.
Cream the butter
Use a whisk to beat the butter until it becomes a white, creamy paste. Add the refined sugar in 2–3 batches, mixing thoroughly after each addition. Pour in the vanilla extract and mix well.
Make the cookie dough
Add the sifted cake flour (for cocoa cookies, also add the cocoa powder), stir with a spatula, and gather the mixture into a single ball of dough.
Chill the dough
Lay a sheet of plastic wrap on the counter, place the dough on it, wrap it up, and use your hands to roll and stretch it into a cylinder. Once it reaches about 3 cm in diameter, place it (still wrapped) in the refrigerator to chill for 1 hour.
Slice and bake
Preheat the oven to 170 °C. Remove the plastic wrap and use a knife to cut the dough into rounds about 1 cm wide. If the center is too soft to cut cleanly, return the remaining dough to the refrigerator to firm up. Line a baking sheet with parchment paper, place the cookie rounds on it with 3–4 cm between them, and bake in the 170 °C oven for 15–20 minutes.
