cajun corned beef hash

Ingredients

frozen shredded hash brown potatoes (thawed) 6 cups
butter 1⁄4 cup
green onions (finely chopped) 1⁄2 cup
sweet red pepper (finely chopped) 1⁄2 cup
green pepper (finely chopped) 1⁄2 cup
seasoned salt 1 teaspoon
Cajun seasoning 3⁄4 teaspoon
chili powder 3⁄4 teaspoon
pepper 1⁄2 teaspoon
cooked corned beef (chopped) 11⁄2 cups
white vinegar 1 tablespoon
eggs 8
Additional Cajun seasoning and hot pepper sauce optional

Instructions

1

Make the potato hash base

In a large skillet, fry the potato hash in butter until almost softened. Stir in onions, peppers, and seasonings. Cook until the hash browns lightly and peppers soften. Add corned beef; heat through.

2

Poach the eggs

Meanwhile, in a deep-sided skillet, bring 2-3 inches of water and vinegar to a boil. Reduce to low heat; keep at a gentle simmer. For each egg, crack a cold egg into a ramekin or small dish, then hold the cup just above the water surface and slide the egg into the simmering water.

3

Finish cooking the eggs

Cook 4 eggs at a time, uncovered, until whites are fully set and yolks start to thicken, about 3-5 minutes. Remove each egg with a slotted spoon. Repeat with remaining eggs.

4

Plate and serve

Place over the hash mixture. Sprinkle with additional Cajun seasoning and serve with hot pepper sauce if desired.
