Ingredients

Eggs 22.5 kg
Flour 10 kg
Cooked flour 7.5 kg
White granulated sugar 21.5 kg
Honey 1.5 kg
Osmanthus 500 g
Water 500 g
Ammonium bicarbonate 100 g

Mixing the batter

Wash the eggs with clean water and crack them into an egg beater. At the same time, add the white granulated sugar, honey, and osmanthus, and beat to aerate (machine speed 250 rpm, about 20 minutes). When the egg mixture turns pale yellow and becomes fluffy and foamy, add the water and the dissolved ammonium bicarbonate, stir briefly, then sift the raw and cooked flour together into the bowl and quickly stir evenly to form the batter.

Forming and baking

Place the special cake molds in the oven to heat, brush with oil, then pour in an appropriate amount of cake batter. Bake promptly, starting with high bottom heat and low top heat. Once the batter rises from the heat, slightly reduce the bottom heat. After the product slightly collapses, increase the top heat. Bake until the product turns golden brown and is fully cooked, then remove it from the oven. Brush the surface with cooked oil, then take the cake out of the mold, let it cool, and pack into boxes.
