Caramel Frosting
A rich, caramel-flavored frosting made with butter, brown sugar, and vanilla, ideal for spreading on cookies or cakes.
Ingredients
unsalted butter (cut into small pieces for high-heat melting)
1 cup (2 sticks)
light brown sugar (packed)
1/3 cup
hot water
2 1/2 tablespoons
light corn syrup
1 tablespoon
confectioners' sugar (sifted)
1 1/2 cups
vanilla extract
1 1/4 teaspoons
Instructions
1
Caramelize the Butter
Melt the butter in a medium saucepan over medium-high heat. Once it boils, reduce the heat to low and simmer, stirring occasionally, until it smells very fragrant and turns light golden, about 3 minutes; watch it closely.
2
Mix the Syrup
Add the brown sugar and stir for 1 minute. Add 2.5 tablespoons of hot water and the corn syrup, stirring until evenly combined and the sugar dissolves.
3
Make the Frosting
Beat in the confectioners' sugar and vanilla vigorously until evenly combined and completely smooth. Let the frosting stand, stirring occasionally, until it cools and firms enough to spread, 2 to 4 minutes.
