Cassia Seed Porridge
Decoct the roasted cassia seeds, strain out the dregs, and cook with japonica rice to make porridge. Season with rock sugar. Traditionally used to clear the liver, improve vision, and promote bowel movements.
Ingredients
cassia seeds (roasted) (dry-fry in pan until slightly fragrant)
10-15 g
japonica rice
50 g
rock sugar
to taste

Decoct the juice
Place the cassia seeds in a pan and dry-fry until slightly fragrant. Remove, let cool, then decoct into juice and strain out the residue.

Cook the porridge
Add the japonica rice and cook into porridge. When the porridge is nearly done, add the rock sugar and bring to one or two more boils before serving.
