Cheese-Stuffed Shrimp

Story

This dish transforms simple shrimp into something special. The cheese filling adds richness while keeping the shrimp tender and juicy. Perfect for dinner parties or a fancy weeknight treat.

Ingredients

large raw shrimp 12 count, peeled and deveined
cream cheese or mozzarella 4 ounces, softened
green onions 2 stalks, finely minced
fresh ginger 1 teaspoon, grated
garlic 2 cloves, minced
salt 1/4 teaspoon
sugar 1/4 teaspoon
white pepper a pinch
rice vinegar 1 teaspoon
cornstarch 1 tablespoon
vegetable oil for brushing

Prepare the shrimp

Rinse the shrimp under cold water and pat completely dry with paper towels. Make a shallow cut along the back of each shrimp to create a pocket for the filling, being careful not to cut through completely.

Make the cheese filling

In a mixing bowl, combine the softened cheese with green onions, ginger, garlic, salt, sugar, white pepper, and rice vinegar. Stir in the cornstarch until the mixture holds together nicely. The filling should be thick but spreadable.

Stuff and arrange

Spoon about a teaspoon of the cheese mixture into each shrimp pocket. Press gently to secure the filling. Arrange the stuffed shrimp in a single layer on a baking sheet lined with parchment paper, leaving space between each one.

Bake until golden

Preheat your oven to 375°F (190°C). Brush the tops of the shrimp lightly with oil. Bake for 12-15 minutes until the shrimp turn pink and the cheese is bubbling and lightly golden on top.

Serve immediately

Let the shrimp rest for 2 minutes before serving. These are best enjoyed warm, garnished with extra green onions if desired. Serve immediately while the cheese is still gooey.
