Tender chicken (sliced horizontally into 2cm thin slices) 300g
Baking soda 5g
Soy sauce 20g
Ground pepper 1g
Starch water 20g
Shaoxing wine 20g
Minced ginger 2g
Water 100g
Peanut oil 500g
Tomato sauce 50g
White sugar 10g
Scallion and ginger slices 20g

Instructions

Marinate the Chicken

Slice the chicken horizontally into thin pieces 2cm long and place them in a bowl. Add baking soda, 10g of soy sauce, pepper, starch water, Shaoxing wine, minced ginger, and 100g of water. Soak for 10 minutes, then add peanut oil and marinate for 1 hour.

Pass Through Oil

Place a wok over high heat and heat the oil to 60% hot. Add the beef slices and toss them together. When the beef turns white, pour it into a slotted spoon to drain the oil.

Pour the Sauce

Add a little oil to the wok, then add tomato sauce, salt, cooking wine, sugar, MSG, and a little broth. Thicken with water starch, add sesame oil, stir well, and pour the sauce over the meat.
