Chilled Bitter Melon Salad

Story

Bitter melon is an acquired taste for some, but this cold preparation highlights its refreshing crunch while mellowing the bitterness. Served on a bed of ice, it stays crisp and cool, making it the perfect appetizer for a hot day.

Ingredients

Bitter melon 1 large
Light soy sauce 2 tbsp
Chinkiang black vinegar 1 tbsp
Sesame oil 1 tsp
Chili oil 1 tbsp
Honey 1 tsp
Toasted sesame seeds 1 tbsp
Ice cubes 1 bowl

Instructions

1

Prep the Melon

Cut the bitter melon in half lengthwise. Use a spoon to scoop out and discard the white seeds and pith.

2

Blanch and Shock

Bring a pot of water to a boil. Blanch the melon halves for no more than 30 seconds, then immediately plunge them into a bowl of ice water for 3 to 5 minutes to stop the cooking and set the color.

3

Slice and Plate

Remove the melon from the ice water and pat dry. Slice it crosswise into thin, translucent slices. Arrange a bed of ice cubes on a serving platter and layer the melon slices on top.

4

Make the Dressing

In a small bowl, whisk together the soy sauce, black vinegar, sesame oil, chili oil, and honey until smooth.

5

Serve

Drizzle the dressing over the sliced melon and sprinkle with toasted sesame seeds just before eating.
