Chilled Okra with Savory Sweet Sauce

Ingredients

okra 200g (about 12-15 pods)
garlic cloves, minced 3
dried red chili flakes 1 teaspoon
light soy sauce 1 tablespoon
oyster sauce 2 tablespoons
granulated sugar 3 tablespoons
black Chinese vinegar 4 tablespoons
sesame oil 1 tablespoon
salt to taste

Prep the okra

Rinse the okra under cool running water. Bring a pot of salted water to a boil, then add the okra and blanch for 2-3 minutes until just tender but still bright green. Immediately transfer to an ice bath to stop the cooking, then drain well. Trim off the tough stem ends and arrange the pods on a serving plate.

Build the aromatics

In a small bowl, combine the minced garlic and dried chili flakes. Sprinkle this mixture evenly over the arranged okra pods.

Make and apply the sauce

In a separate bowl, whisk together the soy sauce, oyster sauce, sugar, black vinegar, and sesame oil until the sugar fully dissolves. Taste and adjust with salt if needed. Pour the mixture evenly over the okra. Serve immediately or refrigerate for 15 minutes to let the flavors meld.
