Instructions
Make the crust
In a small bowl, combine the cookie crumbs and sugar; stir in the melted butter. Press into the bottom and 1 inch up the sides of a greased 9-inch springform pan. Place the pan on a baking sheet; set aside.
Make the cheesecake filling
In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs; beat at low speed until just combined. Add the sour cream and vanilla extract; beat until combined. Pour over the crust; set aside.
Make the cookie dough
In another mixing bowl, beat the butter, sugar, and brown sugar at medium speed until fluffy and pale. Add the water and vanilla extract. Gradually add the flour. Stir in 1 cup of chocolate chips.
Assemble and bake
Drop the cookie dough by teaspoonfuls over the cheesecake filling, gently pressing the dough just below the surface (the dough should be completely covered by the filling). Place the pan on a baking sheet. Bake at 350°F for 45-55 minutes, until the center is almost set.
Cool and decorate
Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool for 1 more hour. Refrigerate overnight. Remove the sides of the pan. Sprinkle with the remaining chocolate chips. Refrigerate any leftover cheesecake.
