Pre-preparation
Let butter soften at room temperature. Sift ingredient group A (cake flour, cocoa powder, baking powder, salt) together. Cut white chocolate into 1.5cm cubes. Line a baking tray with parchment paper. Preheat oven to 180°C before baking.
Add soft brown sugar to creamed butter and mix well
Place butter in a bowl and cream with an electric mixer. Add soft brown sugar in 3 batches, mixing thoroughly on high speed with the electric mixer.
Add egg and mix well
Add the egg in 2-3 batches to the mixture from step 1, stirring evenly with an electric mixer. Add vanilla oil.
Add dry ingredients and mix well
Add all of ingredient group A to the mixture from step 2 at once, stirring to combine with a rubber spatula.
Add chocolate chunks
After mixing the mixture from step 3 to a uniform consistency, add white chocolate chunks and mix well.
Knead into dough and chill
After mixing the mixture from step 4 evenly, knead into a single dough, wrap tightly with plastic wrap, and chill in the refrigerator for about 1 hour.
Press dough into rounds and bake
Divide the dough from step 5 into 12 equal portions, press each by hand into a 7cm diameter round on the baking tray, and bake in the preheated 180°C oven for 18-20 minutes.
Cool on a wire rack
Once baked, remove the cookies from the baking tray and place on a wire rack to cool.
