Instructions
Step 1
Sift all the dry ingredients for the batter through a sieve, then pour them along with the remaining batter ingredients into a mixing bowl. Mix at medium speed until a dough forms, scraping any powder clinging to the sides of the bowl down from time to time. Continue mixing until the dough is smooth, then remove it with a spatula, wrap it in plastic wrap, and let it rest for about 20 minutes.
Step 2
Take out the rested dough from Step 1 and roll it with a rolling pin to about 1–1.5 cm thick. Wrap it in plastic wrap and let it rest for about 10 minutes. Use a donut cutter to punch out ring shapes, lightly dust the surface with a little flour, arrange them on a flat tray, and let them rest a little more.
Step 3
Pour a suitable amount of oil into a deep fryer and heat it to 180°C. Use a spatula to lift the donut dough from Step 2 and place it into the oil, finishing the donuts until golden brown. Remove them, drain off the oil, and let them cool.
Step 4
Heat the bittersweet chocolate and the white chocolate separately over a double boiler to about 50°C until melted into a liquid, then transfer the white chocolate into a small-tipped piping bag.
Step 5
Dip the finished donuts from Step 3 into the melted bittersweet chocolate from Step 4, gently turning them so the surface is fully coated. Remove them and let them cool until the chocolate sets, then pipe the white chocolate from Step 4 on top for decoration.
