Crack the eggs into a mixing bowl. Add the sugar and whisk vigorously until the mixture is pale and slightly frothy.

Pour the mixture into small ramekins or a baking dish. Place in the center of a preheated oven at 180°C (350°F) and bake for approximately 25 minutes, or until the edges are set but the center still has a slight jiggle.
