Ingredients

egg noodles or wheat noodles 200g
chicken or vegetable broth 4 cups
green onions 2 stalks, sliced
eggs 2
light soy sauce 1 tablespoon
sesame oil 1 teaspoon
salt to taste
white pepper pinch

Get the broth ready

Pour the broth into a large pot and bring to a gentle simmer over medium heat. Add a pinch of salt and a splash of soy sauce. Let it cook for about 5 minutes so the flavors meld together.

Cook the noodles

While the broth simmers, cook the noodles according to package directions—usually 3 to 5 minutes. Drain well and divide between two bowls.

Prepare the eggs

Soft-boil the eggs: place them in boiling water for exactly 6-7 minutes, then transfer to ice water to stop cooking. Peel and slice in half.

Pour the hot broth over the noodles in each bowl. Arrange the soft-boiled eggs on top, sprinkle with fresh green onions, drizzle with sesame oil, and add a tiny pinch of white pepper. Serve immediately while piping hot.
