This dish is made by slowly stewing pork ribs with aromatics until tender, then ladling the hot, savory broth directly over crisp fresh greens. Step 1
Wash the spare ribs, add cold water, and heat until the water is about to boil. A lot of foam will appear; skim off the foam and remove the ribs.

Rinse the blanched ribs with hot water to wash away any remaining impurities; this ensures the soup remains clear. Heat water in a pressure cooker, add the ribs, and directly add the ginger, chili, angelica, and cooking wine from the seasonings into the soup. Put the remaining seasonings into a spice box and add it to the soup. Once it reaches pressure, cook for 12 minutes. After releasing the pressure, add salt and simmer on low heat for 2 minutes to let the ribs absorb some saltiness.
Step 3
Wash the lettuce, drain the water, and place it in a clean basin. Make sure the basin is large enough to hold all the spare rib soup. Lettuce is used in this season, but spinach is also an excellent choice when it is in season. Ultimately, you can use any leafy greens that can be eaten after blanching and don't have an overpowering taste, according to your own preference.

Once the ribs are done stewing, remove from heat and pour the soup directly into the basin with the vegetables.
