Instructions

Step 1
Whip egg yolks with sugar over a double boiler, then mix in soft-peak egg whites.

Sift cocoa powder and low-gluten flour.

Add oil and mix evenly, place in the oven, tap the pan gently a few times, position on the upper-middle rack, bake at 190°C for 20 minutes. Once cooled, spread with durian cream, roll up and refrigerate to set.
