Coconut Agar Eggs

This realistic dessert features an outer layer made from shredded daikon and coconut milk, filled with a faux egg yolk crafted from carrot juice.

Coconut Agar Eggs

Ingredients

agar strands (rinsed and slightly snipped, soaked for 15 minutes) 40 g
water 4½ cup
sugar 160 g
carrot juice ½ cup
coconut milk 120 ml
fresh milk 60 ml
gelatin powder (dissolved in a hot water bath) 2 tbsp
water (for dissolving the gelatin) 4 tbsp

Prepare the Ingredients

Rinse the agar strands and snip them slightly. Soak in clean water for 15 minutes, then drain. Dissolve the gelatin powder in a hot water bath and set aside.

Cook the Agar Liquid

Place the agar and 4½ cups of water in a pot and cook until dissolved. Add the sugar and the dissolved gelatin and continue cooking until melted. Remove from the heat and let cool slightly.

Make the Yolks

Take out 1 cup of the agar liquid, stir in the carrot juice until well combined, and pour into round ice cube molds to form the yolks. Transfer to the freezer and freeze until set, then remove and set aside.

Make the Coconut Mixture

Cook the remaining agar liquid over medium-low heat, then add the coconut milk and fresh milk and stir until it comes to a boil.

Assemble

Place 1 yolk in each egg mold, pour in the coconut agar liquid, and freeze in the freezer until set. Serve.
