Coconut Bird's Nest
Hakka dish: bird's nest steamed inside a coconut with chicken broth, seasoned with salt before serving.
Ingredients
Bird's nest (soak in cold water for half an hour, pick out the feathers)
40 g
Coconut (peel, saw off the top, pour out the coconut water)
1 (750 g)
MSG
15 g
Chicken broth
250 g
Fine salt (add when serving, do not add beforehand)
a pinch
Baking soda (for soaking the bird's nest)
a pinch
Instructions
1
Preparing the Bird's Nest
Soak the bird's nest in cold water for half an hour, then pick out any feathers. Soak in boiling water (with a bit of baking soda) for five minutes, then rinse with clean water.
2
Preparing the Coconut
Peel the coconut, saw off the top about 1.5 inches from the apex, pour out the coconut water, and steam for one hour.
3
Steaming
After removing the coconut, add the bird's nest, chicken broth, and MSG, then steam for another hour. Add a pinch of fine salt when serving (do not add the salt beforehand, as the bird's nest will dissolve when it comes into contact with salt).
