Ingredients

Unsalted butter (cut into 1 cm cubes, frozen) 50 g
Egg yolk (beaten) 1
Cake flour 80 g
Baking powder 1/2 tsp
Coconut flour 30 g
Almond flour 15 g
Caster sugar 25 g
Salt a pinch
Sugar for decoration to taste
Flour for dusting to taste

Instructions

1

Prepare ingredients

Cut the butter into 1 cm cubes, place in a bowl, and put it in the freezer. Beat the egg yolk.

2

Make the dough

Sift the cake flour, baking powder, coconut flour, almond flour, and salt together into the bowl using a fine-mesh strainer, then add caster sugar and mix. Add the butter and rub it into the dry ingredients by hand until it forms pieces about the size of red beans. Add the beaten egg yolk, knead the ingredients into a ball, wrap in plastic wrap, and refrigerate for 1 hour to rest.

3

Bake

Preheat the oven to 160°C. Sprinkle flour for dusting on the work surface, roll out the dough to 3 mm thick, and cut into shapes with cutters. Line a baking tray with a silicone baking mat, space the dough pieces apart, and bake at 160°C for 15 minutes. Once cooled, sift decorative caster sugar over the top.
