Coconut Milk Mango Sago Pudding
Today is the first day of the National Day holiday, which also happens to be Yingli's birthday — what an honor to share the day with our motherland. As every year, we headed to my parents' house for a celebratory dinner. While my husband and I were discussing what to cook and which wine to open, my son piped up that he wanted a drink too. I usually don't let him have beverages because of all the additives, and I worry about the effect on his health. Luckily, there was a large mango in the fridge, so I put on my busy-mom hat and used it to make tonight's drink for him. Coconut milk mango sago is similar to the classic mango pomelo sago (杨枝甘露), but I was short on time and didn't have grapefruit on hand, so I swapped in red pomelo — its natural sweetness makes a lovely pairing. From prepping the fruit to finishing, it took about half an hour; very simple and quick. This drink uses up a good amount of mango, so any leftover mango turned into sago pudding would be a hit! The moment I bottled it, my son was already eager to try it and finished a bottle in no time. It tasted really good.
Ingredients
Instructions
Step 1
Prepare the sago. Fill a pot with water and bring to a boil over high heat. Add the sago to the boiling water, reduce to low heat, and cook for 15 minutes, stirring constantly with a spoon to prevent it from sticking to the pot.
Step 2
Cook until the edges of the sago become translucent with just a tiny white dot remaining in the center. Turn off the heat, cover the pot, and let it sit for 10 minutes until the white dots disappear and the sago is completely translucent. Scoop it out into cold water, rinse twice with cool water, and set aside. Remember to drain off the water before using.
Step 3
Add 400 g mango flesh, 200 g coconut milk, 400 g milk, and 20 g condensed milk into a blender (add a bit more condensed milk to taste if you prefer it sweeter).
Step 4
Blend into a smooth, silky mango milkshake and set aside.
Step 5
Now for assembly. From the bottom up, the order is: 1. mango pieces (cut the bottom layer of mango into small pieces so a straw can pick them up), 2. grapefruit flesh, 3. sago, 4. milk (or coconut milk), 5. mango milkshake.
Step 6
After adding the grapefruit flesh, pour in the coconut milk. If you do not have coconut milk, use milk instead, just enough to cover the grapefruit. (If using milk, add a bit more condensed milk than the recipe calls for, since milk is not sweet and the drink will be less sweet overall.)
Step 7
Finally pour in the mango milkshake to finish assembly. Cover and chill before serving for an even better taste. When drinking, stir well with a straw; the flavor is wonderful~
Step 8
Give it a try~
