Codonopsis Steamed Chicken

Ingredients

hen chicken (bled, plucked, gutted, washed, briefly blanched in boiling water to remove blood residue, then rinsed with clean water and drained) 1 (about 1.5 kg)
codonopsis root (dangshen) 50 g
goji berries 25 g
fermented soybean paste 150 g
dried tangerine peel 10 g
ginger 4 slices
fine salt 10 g

Instructions

1

Prepare the chicken

Bleed the chicken, pluck the feathers, remove the entrails, and wash it clean. Briefly blanch it in a pot of boiling water to remove blood residue, then lift it out, rinse with clean water, and drain well.

2

Steam the chicken

Place the chicken in a pot and add enough clean water to submerge it. Add the goji berries, dried tangerine peel, codonopsis root, fermented soybean paste, ginger slices, and fine salt, and stir to combine. Cover with a lid, set the pot on a steaming rack, and steam for 2.5 hours until the flavors are fully absorbed. Remove from the heat and serve.
