Coffee Marble Glaze

This transparent glaze features a beautiful coffee marble effect.

Ingredients

Gelatin 8 g
Water 250 g
Sugar 40 g
Glucose 40 g
Vanilla bean (split) 1 pod
Coffee liqueur 20 g
Coffee extract 10 g

Instructions

Soften gelatin

Soften gelatin with cold water (see page 54)

Cook syrup

Cook water, sugar, glucose, and vanilla pod until sugar and glucose are completely dissolved

Mix

Remove from heat and cool slightly, add gelatin and stir until dissolved. Scrape seeds from vanilla pod and add to syrup

Use

Reheat if necessary before use. Add coffee liqueur and coffee extract, swirl slightly but do not mix completely. Pour over cake surface to create a marble pattern
