This simple side dish makes excellent use of celery leaves that are often discarded. Brief blanching keeps the leaves vibrant and tender, while a tangy dressing of garlic, vinegar, and sesame oil adds a fragrant, savory finish perfect for a light meal.

Ingredients

Celery leaves to taste
Garlic to taste
White vinegar to taste
Premium soy sauce to taste
Salt to taste
Sesame oil to taste
Water to taste

Instructions

Step 1

Place the picked celery leaves in a container, wash repeatedly with water until clean, and drain the water.

Add water to a pot and bring to a boil, add the cleaned celery leaves and blanch for 15 seconds.

Immediately remove and rinse with cold water, then drain the water.

Peel the garlic, wash clean, smash flat with a knife, then chop into minced garlic.

Squeeze the water out of the blanched celery leaves and chop into minced pieces.

Place the chopped minced garlic and celery leaves into a container.

Add in order two spoons of white vinegar, one spoon of Weijixian soy sauce, an appropriate amount of salt, and sesame oil.
