This classic cold dish comes together in minutes and makes a wonderful appetizer or side for any meal. The combination of crunchy celery and silky wood ear mushrooms creates a lovely textural contrast.

Ingredients

celery 200g, cut into 2-inch pieces
dried wood ear mushrooms 15g, soaked and drained
cooking oil 2 tablespoons
chili oil 1 tablespoon
sesame oil 1 teaspoon
light soy sauce 2 tablespoons
rice vinegar 1 tablespoon
salt to taste

Prep the vegetables

Cut the celery into bite-sized pieces. Soak the dried wood ear mushrooms in warm water for about 15 minutes until softened, then drain well and tear into smaller pieces.

Blanch the celery

Bring a small pot of water to a boil. Add the celery pieces and cook for about 1 minute until just tender but still crisp. Drain and let cool completely.

Make the dressing

In a mixing bowl, combine the cooking oil, chili oil, sesame oil, soy sauce, rice vinegar, and salt. Whisk until well combined.

Toss and serve

Add the cooled celery and wood ear mushrooms to the dressing. Toss everything together until evenly coated. Serve immediately at room temperature or chill briefly before serving.
