Cold Lotus Root Salad
Lotus root is the fleshy, jointed underground stem of the lotus plant, a member of the water lily family. It has a porous core, turns bright white when sliced, and has a delightfully crisp, crunchy texture when prepared as cold tossed lotus root slices.

Fresh lotus root

Peel and wash the fresh lotus root.

Bring water to a boil in a pot, then blanch the lotus root slices briefly (adjust the time based on your preferred texture).

Remove and rinse in cold water, arrange the lotus root slices on a plate, and drizzle with the sauce.
