Prep the noodles and mushrooms
Cook the wheat noodles according to package directions until just tender, then drain and rinse under cold water. Soak the glass noodles in hot water until soft, about 5 minutes, then drain. Soak the dried wood ear mushrooms in warm water for 20 minutes until softened, then slice into thin strips.
Make the dressing
In a large bowl, whisk together sesame paste, soy sauce, rice vinegar, chili oil, sesame oil, and sugar until smooth. Add a splash of warm water if needed to thin the consistency.
Combine and season
