Cold Tossed Shepherd's Purse

Ingredients

Shepherd's purse (washed, old leaves removed)
Dried tofu (cut into thin strips)
Carrot (cut into thin strips)
Oil (for blanching) a pinch
Salt to taste
Sesame oil to taste
Vinegar to taste

Instructions

1

Step 1

Wash the shepherd's purse and remove any old leaves. Blanch it in a pot of boiling water, adding a pinch of salt and a little oil during blanching. About half a minute is enough.

2

Step 2

Cut the dried tofu and carrot into thin strips — the finer the better for a nicer texture. Optionally, blanch the carrot strips in hot water according to personal preference.

3

Step 3

Combine the shepherd's purse, carrot strips, and dried tofu strips. Add sesame oil, salt, and vinegar, then toss well to combine.
