Ingredients

Chinese chives
cornmeal
eggs
fine salt
sesame oil

Instructions

1

Step 1

Wash the Chinese chives, drain thoroughly, and chop finely.

2

Step 2

Sift the cornmeal, add the beaten egg mixture; slowly pour an appropriate amount of water into the bowl while stirring continuously.

3

Step 3

Mix until you achieve a ribbon-like batter consistency, then let it rest for 5 minutes for later use.

4

Step 4

Crack the remaining eggs into a bowl and beat them, add a suitable amount of salt, stir well, then pour into the heated pan to spread and cook into an egg crepe.

5

Step 5

Remove the cooked egg crepe and cut it into thin shreds to set aside.

6

Step 6

Combine the chopped Chinese chives and shredded egg crepe, season with an appropriate amount of salt and sesame oil, and mix evenly.

7

Step 7

Place the pan on the stove, heat a small amount of oil, pour in the rested cornmeal batter, and rotate the pan to spread the batter into a thin, even pancake.

8

Step 8

Place a layer of the prepared filling on top of the pancake, cover the pan with a lid, cook until fully done, then remove from the pan.

9

Step 9

Cut into pieces, plate, and enjoy immediately.
