Wash the Chinese chives, drain thoroughly, and chop finely.

Sift the cornmeal, add the beaten egg mixture; slowly pour an appropriate amount of water into the bowl while stirring continuously.

Mix until you achieve a ribbon-like batter consistency, then let it rest for 5 minutes for later use.

Crack the remaining eggs into a bowl and beat them, add a suitable amount of salt, stir well, then pour into the heated pan to spread and cook into an egg crepe.
