Brew the coffee
Heat filtered water to just below boiling (about 200°F/93°C). Grind your coffee beans to a medium-fine consistency, similar to table salt. Place filter in dripper, rinse with hot water, discard rinse water, add grounds, and pour water in slow circles until you have about 150ml of concentrated coffee. Let cool to room temperature.
Mix the base
In a pitcher or bowl, combine the cooled coffee concentrate with whole milk. Add sugar to taste—start with 2 tablespoons, stir well, and adjust if needed. The mixture should taste slightly sweeter than you want the final pop to be, as freezing dulls sweetness. Add a tiny pinch of salt if using.
Pour and freeze
Divide the coffee-milk mixture evenly among ice pop molds. Tap gently on counter to release any air bubbles. Insert sticks and transfer to freezer. Freeze for at least 4 hours, preferably overnight, until completely solid.
Serve
Remove from freezer, run mold briefly under warm water to loosen, and gently pull out the pops. Serve immediately for the best texture. Wrap unused pops in plastic wrap and store in freezer for up to 2 weeks.
