Cutting and Marinating
Cut the beef brisket into strips, then slice on the bias, and toss with starch until evenly coated.
Preparing the Sauce
In a bowl, combine soy sauce, vinegar, sugar, Shaoxing wine, and MSG to make the sauce mixture.
Frying
Heat a wok over high heat and add the soybean oil. When the oil reaches about 70% hot (roughly 175°C / 350°F), add the starch-coated brisket slices one by one, fry until golden brown, then drain in a colander.
Stir-frying and Glazing
Leave a small amount of oil in the wok, add scallions, ginger, and garlic to bloom, then add the fried brisket and the prepared sauce. Toss briefly, drizzle with sesame oil, plate, and garnish with cilantro segments.
