Ingredients

Peeled yellow mung beans (soaked at least 3 hours) ¾ cup
Sugar ¼ cup
Dry small sago pearls (rinsed) ½ cup
Red bean paste 1 cup
Crushed ice or shaved ice to taste
Coconut milk 1 cup
Pandan syrup ¼ cup

Cook mung beans

In a large pot, bring 2 cups of water to a boil over medium heat. Add the peeled mung beans and sugar. Stir constantly until all the water is absorbed, about 20 minutes. Cool. Use a spatula or large fork to mash the mung beans into a coarse paste.

Cook sago

Meanwhile, bring 3 cups of water to a boil over high heat in a medium pot. Add the sago pearls and reduce to medium heat. Cook until the pearls turn translucent with only a tiny white dot in the center, 15 to 20 minutes. Pour the sago into a sieve, rinse with cold water, and drain.

Assemble

Assemble the dessert: layer ¼ cup each of the cooked mung beans, red bean paste, and sago pearls in a tall glass. Top with ice. Pour in ¼ cup coconut milk, then add 1 tablespoon of syrup (or to taste), letting it seep through. Repeat for the remaining 3 servings. Serve with a long-handled spoon and straw. Stir before eating!
