Crispy Three-Treasure Spring Rolls

These Three-Treasure Spring Rolls are a classic homemade favorite, featuring a hearty filling of pork and vegetables wrapped in a crispy shell.

Ingredients

Ground pork 200g
Dried sweet potato noodles (glass noodles) 100g
Carrots 1 large
Fresh shiitake mushrooms 3-4 pieces
Spring onions 2 stalks
Spring roll wrappers 1 packet
Soy sauce 1 tbsp
Sesame oil 1 tsp
Salt and pepper to taste

Instructions

Prepare the Noodles

Bring a pot of water to a boil. Cook the dried sweet potato noodles until they are completely soft. Drain them and set aside to cool slightly.

Prep the Vegetables

Finely shred the carrots and slice the mushrooms. Blanch the carrot shreds and mushroom slices briefly in boiling water, then drain well. Once cooled, chop them into small pieces along with the cooked noodles.

Mix the Filling

In a large mixing bowl, combine the ground pork, chopped noodles, diced carrots, mushrooms, and finely minced spring onions. Season with soy sauce, sesame oil, salt, and pepper. Stir the mixture thoroughly until everything is well incorporated.

Wrap the Rolls

Place a spoonful of the filling onto the center of a spring roll wrapper. Fold the bottom corner over the filling, fold in the sides, and roll tightly towards the top corner. Seal the edge with a little water or paste.

Fry Until Golden

Heat oil in a deep pan over medium heat. Fry the spring rolls in batches until they are golden brown and crispy on all sides. Remove and drain on paper towels before serving hot.
