Step 1

Deep-fry the tofu briefly, then remove and set aside. Clean the fish's abdominal cavity next—current water bodies are polluted to varying degrees, so there is black film in the fish's abdominal cavity! Make cross cuts on both sides of the fish to make it easier to absorb flavor. Place the seasoned fish on a plate, and prepare shredded ginger, crushed garlic, and dried chili strips. Once prep work is complete, heat the wok, pour in peanut oil, and when the oil reaches 40-50% heat, add the crucian carp.

Deep-fry until both sides are golden brown.

Add cooking wine, shredded ginger, crushed garlic, and stir-fry until fragrant.

Add dried chili strips; add more chili if you prefer a spicier flavor.

Add some water, and once the water boils, add the deep-fried tofu, then simmer on high heat to reduce the sauce.
