Step 1
Separate the egg white and egg yolk from the eggs.
Step 2
First beat the egg white until foamy with bubbles the size of fish eyes, add 5g of sugar, continue beating until the mixture becomes noticeably thicker, add another 5g of sugar, beat until distinct streaks appear in the mixture, add the remaining 5g of sugar, and keep beating until a small, stiff peak forms that stands upright when the whisk is lifted.
Step 3
Mix the egg yolk with 10g of sugar and beat until well combined.
Step 4
Mix the beaten egg white and egg yolk together by folding until evenly combined. [Do not stir in circles; fold from the bottom up.]
Step 5
Sift in 35g of low-gluten flour, and fold until evenly combined. [Again, do not stir in circles.]
Step 6
Transfer the batter into a piping bag fitted with a small piping tip, and pipe long, thin strips onto a sheet of parchment paper. If you do not have a piping bag, you can use a regular food-safe plastic bag instead [but avoid using bags that are too thin and easy to deform]; after filling the bag with batter, simply snip a small hole in one corner to pipe the strips.
Step 7
Preheat the oven to 190 degrees Celsius, and bake the cookies for 6 to 8 minutes. Take them out once they are lightly golden brown, being careful not to overbake.
Step 8
Melt the chocolate over a water bath until it softens into a smooth chocolate sauce [make sure the container is completely clean, and do not let the water come to a boil]. Pour the melted chocolate over the cookie sticks. This cookie recipe yields crispy cookies; if the water boils, the steam will easily cause the cookies to soften and break, and they are also prone to breaking when handling them after baking.
